Marc's Favorite Cookie

I don't know how, but Marc is pretty anti-dessert.  Cake, cookies, candy, ice cream - he turns it all down effortlessly.  Not me.  I once at eighteen chocolate bunnies during Lent.  I can eat an entire Entenmann's Golden Fudge Cake in one sitting.  I've come to accept Marc's anti-sweet tooth - more for me!

Not surprisingly, I love to bake.  So entering into our new phase of toxic-free eating (which I'll fill you in on real soon), I've been on the hunt for great recipes.  

In a cookie recipe book I purchased in DisneyWorld, I found this amazing recipe for "Death by Chocolate Cookies."  With no refined sugar and only half a cup of flour, I was super intrigued with this recipe and decided to make it and bring it over to a friend's house.  Although the original recipe called for 16oz of the same chocolate, I improvised with what we had available in the house.

Arianna and I made the cookies, and then sampled one.  They were amazing.  Marc tried one and loved it.  I packed the rest away in a tin and went to bed.  When I woke up the next morning, you can imagine my surprise that HALF the cookie tin was empty.  Marc had eaten them all!!!

When I confronted him about it (more comically shocked than angry) he admitted that although he hates cookies, he thought they were delicious and couldn't stop eating them.  So, in honor of Father's Day, I'm sharing this recipe with you, I've renamed: Marc's Favorite Cookies.

Marc's Favorite Cookies:

12oz semi-sweet chocolate chips (I used Nestle)
5oz Hershey mini-kisses baking pieces
3/4 cup firmly packed dark brown sugar
2 eggs
1 tsp vanilla
1/2 cup flour
1/4 tsp baking powder

In a glass bowl, melt the Hershey mini-kisses and a quarter of the semi-sweet chocolate in the microwave.  Stir until smooth.

Combine brown sugar, butter, eggs, and vanilla.  Stir in melted chocolate.  Add flour and baking powder.  

When well-combined, add in remainder of chocolate chips.  

Place on a cookie sheet covered in parchment paper.  Bake at 350 for 7-9 minutes for small cookies, or 11 minutes for larger cookies.  Cookie should look puffed and center should feel set.
